The cuisinart electric pressure cooker goes up to 10 psi – according to the USDA, foods should be sterilised at 240° to 250°F, attainable with pressure canners operated at 10 to 15 PSI. Their other stipulation is that the pot holds at least 4 quarts jars, which this pressure cooker does.
