An old fashioned fine mesh chinois sieve is ideal if you want to strain broths, chicken stock, gravy or even to strain french pressed coffee into a cup.
Here are the best chinois strainers on the market:
RSVP Conical Chinois Strainer
This fine double mesh chinois strainer is made from stainless steel.
It comes in three sizes – three inches, four inches and five inches.
Choose the size depending on what you are straining – the four inch strainer fits nicely over a mug for instance.
HIC Brand that Cook, Stainless Steel Chinois
This fine mesh chinois has a 7 inch diameter and is 18inches by 8 inches. This is bigger than the RSVP strainer above, and is more suitable for straining broths into pans.
It is made of stainless steel, and comes with a long handle and a lip that holds it over the pan you are straining into.
Linden Jonas Stainless Steel Chinois
This stainless steel chinois is nine inches in diameter, and has hanging tabs to hold it over the pan you are sieving into.
It is dishwasher safe and is made in Sweden.
Please note that if you are pulping soft fruit you may be better off with a food mill, and if you are mashing firm vegetables you may be better off with a potato ricer. Please see the pages below:
